Ingredients for Parmesan Fish Sticks:
All-Purpose flour - 1/3 cup
Salt - 1/2 tsp.
Black pepper - 1/8 tsp.
Eggs - 2 large
Breadcrumbs - 1 cup
Parmesan cheese - 1/3 cup (grated)
Tilapia fillet - 1 lb.
Method of preparing the Parmesan Fish Sticks:
  1. Preheat oven to 450°F (230°C). Mix flour, salt and pepper in a bowl. Whisk eggs in a second bowl. Toss bread crumbs with cheese and seasoning blend in a third bowl.
  2. Cut fillets into 1-inch strips. Dip fish in flour mixture. Make sure you coat them on both sides and shake off the excess. Now, dip in eggs and then in the bread crumbs mixture. Keep patting to help coating adhere.
  3. Place on a foil-lined baking sheet coated with cooking spray. Spritz tops with cooking spray. Bake for 10-12 minutes. You will know you are done when the fish is golden brown and begins to flake easily with a fork.
