Mint and Lemon Drink

The best way to complement a meal is with a cold, refreshing beverage that doesn’t contain extra calories, making it the perfect choice for both diabetics and those who want to reduce their sugar intake. If you'd like, you can also add any alcoholic spirit of your choosing.

Mint and Lemon Drink
Ingredients for drink:
Lemongrass - 1 cup (chopped)
Mint - 1 cup (chopped)
Water - 1/2 cup
Stevia - 2 tbsp. (honey works as well)
Lemon juice - 1/2 tbsp. (lime works as well)
Sparkling water - as needed
ice - as needed (shredded is best)
Method of preparing the drink:
  1. Place a deep pot over medium heat, add lemongrass, mint, sugar, and water, mix well and bring to a boil. Then remove the pot from the heat. 
  2. When the lemongrass mixture cools, place it in a blender, blend until smooth, and then transfer to a large bowl. Add lemon juice and mix well.
  3. When serving in the summer, place a few ice cubes (whole or shredded) into each glass, pour the drink to 2/3 the glass, and fill the rest with sparkling water.
Chef's Tip:
While this is the perfect refreshment in the summer, you can also serve it hot and without sparkling water as a nice brewed tea. Garnish with lemon and leaves.
