Apricot Rice Pudding Popsicles

Homemade popsicles can be as easy as freezing Kool-Aid with a stick in a cup. But they can also be a top-tier frozen gourmet treat, just like this fantastic apricot-rice pudding popsicle. Dried apricots alongside lemongrass, all wrapped in the subtle hues of coconut milk. How sophisticated is that?

Ingredients for Apricot Rice Pudding Popsicle:
Milk - 1 cup
Coconut milk - 3/4 cup, 2 tbsp.
Cream - 1/4 cup
Lemongrass - 1 stalk (thinly sliced)
Water - as needed
Ginger - 1 tbsp (peeled and minced)
Vanilla Extract - 1 tsp.
Rice - 3 tbsp (short grain is best)
Dried apricots - 1/4 cup (finely diced)
Sugar - 1/4 cup
Method of preparing the Apricot Rice Pudding Popsicle:
  1. Remove the tough outer layer of the lemongrass stalk.
  2. Mix milk, cream, coconut milk, lemongrass, ginger, 1/2 cup water and vanilla extract.
  3. Bring to a boil. Let cool for 15 minutes.
  4. Place rice in 1/2 cup of water for 10 minutes and then drain. Strain the coconut mixture through a sieve and add the rice.
  5. In a saucepan bring to a boil and then let it simmer on low heat for 30 minutes, until the rice is soft.
  6. Once cooled stir in apricots and sugar. Freeze for at least 3-4 hours.
