Prep Time 1 hour and 20 minutes
Serves: 12
Difficulty Level: Low
Tuna Mini Wraps
Ingredients:
Cream cheese - 8 oz. (softened)
Hard boiled eggs - 4 (peeled and cubed)
Canned tuna - 2 (5-oz) cans (drained)
Parsley leaves - a handful (finely chopped)
Salt and Pepper - to taste
Method of Preparation:
  1. Combine the tune with the cream cheese, and salt and pepper in a small bowl.
  2. Spread a quarter of the tuna mixture onto each tortilla, followed by a quarter of the chopped parsley and about 1 cubed boiled egg.
  3. Starting at the end closest to you, roll the tortilla away from yourself into a spiral. The roll should be firm, but not so firm that the filling is spilling out from the sides. Wrap the roll in aluminum foil and place in the fridge.
  4. Repeat the last two steps with the remaining 3 tortillas.
  5. Chill the tuna tortillas for at least 1 hour.
  6. Remove from the fridge and cut the tortillas into 1-inch thick slices with an extra sharp knife. Serve immediately, or keep refrigerated for up to 2 days.
