Shepherd's Pie With Beef
Ingredients for Shepherd's Pie With Beef:
Unsalted butter - 2 tbsp.
Onion - 1 (quartered and slices)
Roast beef - 2 cups (diced)
Cooked carrots - 1/2 cup (chopped)
Frozen peas - 1 cup (thawed)
Beef gravy - 2 cups (homemade or store-bought)
Kosher salt - to taste
Ground black pepper - to taste
Mashed potatoes - 2 cups
Egg yolk - 1 (beaten)
Method of preparing the Shepherd's Pie With Beef:
  1. Preheat the oven to 400°F (200°C). Prepare a 2 1/2-quart baking dish.
  2. In a large frying pan, melt the butter on medium and sauté the onions until soft and translucent.
  3. To the same pan, add the beef, carrots, peas, and gravy. Season with salt and pepper and mix well.
  4. When the beef and vegetable mixture is heated through, remove the pan from the heat and transfer the mixture to the baking dish.
  5. In a big bowl, combine the mashed potatoes and the egg yolk. Stir until the eggs are fully incorporated.
  6. Dollop by dollop spread the potatoes over the meat and vegetable mixture in an even layer.
  7. Bake the shepherd's pie until the mashed potatoes turn golden brown on the sides and the gravy is bubbling. This should take around 30 minutes.
Chef's Tip:
If you don't have roast beef, you can also use browned ground beef.
