Roasted Chicken with Dates, Carrots, and Pistachios

Chicken is the base for some of the most popular dishes in almost every home and each has its own recipe. But, if you want to diversify a little and taste something new and original, you should try this unique roasted chicken recipe. Apart from the usual spices such as salt, olive oil, and garlic, this dish contains many interesting ingredients that make it a favorite, especially among children.

Ingredients for chicken:
Chicken parts - 3 1/2 lbs. (thighs, legs, and breast)
Carrots - 3 cups (cut into 1/2-inch slices)
Dates - 1 cup (pitted and thinly sliced)
Onion - 1 medium (thinly sliced)
Green onions - 12 tbsp. (coarsely chopped - for garnish)
Pistachios - 1/2 cup (salted and chopped - for garnish)
Ingredients for marinade:
Lemon zest - 1 tsp.
Orange zest - 1 tsp.
Lemon juice - 3 tbsp.
Orange juice - 6 tbsp.
Olive oil - 6 tbsp.
Mustard - 3 tbsp.
Honey - 6 tbsp.
Chili - 1/2 tsp.
Garlic - 3 cloves (coarsely chopped)
Salt - 2 1/2 tsp.
Fresh thyme - 1 tbsp. (or 1 tsp dried)
Method of preparing the chicken:
  1. Mix the marinade and set aside.
  2. In a zip lock bag place the chicken, carrots, dates, and onions. Pour the marinade into the bag and close it tightly. Shake the bag so that the marinade coats all parts of the chicken, place the bag in a baking pan, and let rest in the refrigerator for 6 hours or overnight.
  3. Preheat your oven to 220°F (100°C) and line a baking sheet.
  4. Arrange the contents of the bag on the baking sheet, chicken facing skin side up. Roast until golden brown and soft for about 40-45 minutes. Flip and toss halfway through.
  5. At the end of the cooking, move the chicken and vegetables to a serving dish, pour some of the sauce from the pan over it, sprinkle with green onion and pistachios, and serve.
