Chicken Tortilla Soup

Ingredients:
Chicken broth - 2.5 cans (14.5 oz.) (low-sodium)
Petite diced tomatoes - 1 can (14.5 oz.)
Yellow onion - 3/4 cup (finely chopped)
Garlic - 4 cloves (pressed through a garlic crusher)
Chili powder - 2 1/2 tsp.
Ground cumin - 1 1/2 tsp.
Paprika - 3/4 tsp.
Ground coriander - 1/2 tsp.
Salt and Pepper - to taste
Chicken breast - 1.5 lbs (boneless and skinless)
Black beans - 1 can (14.5 oz.) (drained and rinsed)
Frozen corn - 1 1/2 cups
Lime juice - 1 tbsp. (fresh)
Cilantro - 1/4 cup (chopped, fresh)
Lemon Chicken Orzo Soup

For a more satisfying version of the classic chicken soup, this one uses orzo pasta and is complete with a lemony tinge, making it all the more irresistible. Chicken thighs - 1 lbs. (boneless and skinless, cut into 1-inch chunks)

Onion - 1 (diced)
Carrots - 3 (peeled and diced)
Celery - 2 stalks (diced)
Dried Thyme - 1/2 tsp.
Chicken stock - 5 cups
Orzo Pasta - 3/4 cup (uncooked )
Rosemary - 1 sprig
Lemon juice - of 1 lemon

Hominy - 3 (15 oz.) cans (alternative: chickpeas or corn)
Cooked Chicken - 4 cups (diced or shredded)

Unsalted butter - 2 tbsp.
Cremini mushroom - 8 oz. (thinly sliced)
Onion - 1 (diced)
Carrots - 3 (peeled and diced)
All-Purpose flour - 1/4 cup
Dried Thyme - 1/2 tsp.
Chicken stock - 4 cups
Half and Half - 1/2 cup (or more, as needed)
Parsley leaves - 2 tbsp. (chopped )
