Oven-Baked Chicken Parmesan

If you've never tried chicken parmesan, you're in for a special treat. Chicken parmigiana (or chicken parmesan) is a chicken dish made with chicken schnitzels covered in tomato sauce and topped with parmesan and mozzarella cheese. This decadent dish was invented by the 20th-century Italian Diaspora, and it's actually very quick and easy to make at home.

Oven-Baked Chicken Parmesan
Ingredients for Oven-Baked Chicken Parmesan:
Chicken breasts - 2 (skinless and boneless)
Eggs - 2 (beaten)
Breadcrumbs - 1/3 cup
Parmesan cheese - 1/3 cup (grated)
Garlic - 2 cloves (crushed)
Canned tomato puree - 1 1/2 cups
Sugar - 1 tsp.
Oregano - 1 tsp.
Mozzarella - 2 1/2 oz. (torn into smaller pieces)
Olive oil - 1 tbsp.
Method of preparing the Oven-Baked Chicken Parmesan:
  1. Cut the chicken breasts in half lengthwise. Place each piece of chicken between two sheets of plastic wrap. Then flatten the chicken pieces with a meat tenderizer or an ordinary rolling pin. Each piece should be around 1/2 inches thick.
  2. Dip each piece of chicken in the beaten eggs, then move it to the breadcrumbs mixed with half of the parmesan. Set aside to the fridge.
  3. Heat olive oil on medium and cook the garlic until fragrant. Pour the tomatoes along with the sugar and oregano and simmer the sauce for 5-10 minutes.
  4. Heat the broiler on high and cook the chicken for 5 minutes on each side. The chicken will be golden brown. Set aside.
  5. Pour the tomato sauce into an ovenproof pan. Top the sauce with the grilled chicken.
  6. Put the mozzarella pieces over the grilled chicken pieces. Sprinkle the grated parmesan over the chicken and broil for another 3-4 minutes. The cheese should be melted and the tomato sauce should be bubbling.
  7. Serve fresh and hot with vegetables, pasta, or a salad on the side.
