Polish Pickled Herring

In Poland and other parts of Europe, pickled herring is a traditional Christmas delicacy. It may sound weird at first, but it's actually much tastier than many canned fish varieties sold in stores, so we definitely urge you to give this recipe a try. Herring fillets are marinated in either salty brine or vinegar, and this recipe will show you how to pickle herring with vinegar in the fridge.

Polish Pickled Herring
Ingredients for Pickled Herring:
Sugar - 5 tbsp.
Water - 3 cups
Salt - 2 tbsp.
Peppercorns - 1 tsp.
Mustard seeds - 1 tsp.
Onions - 1-2 small (peeled and sliced)
White vinegar - 1 1/3 cups
Fresh herring fillets - 2.2 lb (cut into bites)
Carrot - 1 small (peeled and sliced)
Method of preparing the Pickled Herring:
  1. In a large pot, combine the sugar, water, salt, and spices. Bring the brine to a boil and reduce the heat to low. Simmer for 5 minutes, then take it off the heat.
  2. Add the raw onions and let the mixture cool to room temperature. Then stir in the vinegar.
  3. Now start packing the herring fillets into jars. Layer pieces of carrot and onion in-between the herring. Then cover the herring with the marinade completely.
  4. Seal the jars and refrigerate the herring. The herring will be ready after 3-5 days.
  5. Pickled herring will stay fresh for about a week in the fridge.
