Simple Fish Stew

When rightly made, a hot bowl of fish stew can be a terrific choice for a healthy meal. This simple fish stew recipe is packed with white fish fillets as well as king prawns, veggies, and a rich tomato sauce. It hardly takes 10 minutes to prepare and will leave you immensely satisfied. This dish also goes well with rice.

Simple Fish Stew
Ingredients for Simple Fish Stew:
Olive oil - 1 tbsp.
Fennel seeds - 1 tsp.
Carrots - 2 (diced)
Celery sticks - 2 (diced)
Garlic - 2 cloves (finely chopped)
Leeks - 2 (thinly sliced)
Fish stock - 2 cups
Pollock fillets - 2 (7 oz each) (skinless)
King prawn - 3.5 oz (raw, shelled)
Method of preparing the Simple Fish Stew:
  1. In a large pan, heat the oil and add the fennel seeds, carrots, celery, and garlic. Cook until they started to soften. Add the leeks, tomatoes, and fish stock. Season with salt and pepper and bring to a boil.
  2. Cover and simmer for 15-20 minutes. Make sure the vegetables are tender and the sauce has thickened and reduced slightly.
  3. Now add the beans and fish and scatter over the prawns. Cook for 2 more minutes. Finally, ladle the stew into bowls and serve with a spoon.
