Fisherman’s Eggs

Punch up the protein count right by starting your day with this egg-sardine combo. Sardines have an exceptionally high content of protein, vitamin D, calcium, and vitamin B-12. They will also give you almost 3 times the daily value of B-12. Sounds like a great way to start the day!

Fisherman’s Eggs
Ingredients for Fisherman’s Eggs:
Sardines - 1 can
Shallots - 1 (sliced )
Flat-leaf parsley - a handful
Garlic - 2 cloves (minced)
Salt and Pepper - to taste
Eggs - 4
Method of preparing the Fisherman’s Eggs:
  1. Heat the oven to 500°F. Heat an ovenproof skillet inside for a few minutes.
  2. Once warm, place all ingredients except the eggs in the skillet and bake for 6 minutes.
  3. Break the eggs gently over everything, to create an even egg topping. Don't let the yolks break.
  4. Bake for 7 more minutes, or until the eggs are cooked but still jiggly. Remove the dish and let it sit for five minutes (the eggs will continue cooking).
  5. Serve with your favorite sauce and crispy toast.
