Shrimp Tikka Masala

Shrimp tikka masala is the quicker, easier, and healthier version of the classic chicken tikka masala. This speedy dinner is ready in 30 minutes, and it's an absolute delight.

Shrimp Tikka Masala
Ingredients for Shrimp Tikka Masala:
Onion - 1 large (roughly chopped)
Ginger - a thumb-sized root (peeled)
Garlic - 2 cloves
Crushed tomatoes - 1 (14-oz) can
Light brown sugar - 1/2 tbsp.
Cardamom pods - 3 (crushed)
Basmati rice - 1 cup
Raw shrimp - 1/2 lb.
Almond flour - 3 tbsp.
Coriander - 1/2 bunch (roughly chopped)
Tikka curry paste - 2-3 tbsp.
Neutral oil - 2 tbsp.
Double cream - 1 tbsp.
Salt and Pepper - to taste
Method of preparing the Shrimp Tikka Masala:
  1. In a food processor, mince the onion, ginger, and garlic into a smooth paste.
  2. In a large skillet, heat the oil on medium heat. When the oil gets hot, add the onion and ginger paste and cook until it's lightly golden - about 8 minutes. Mix in the curry paste and continue cooking for 1 more minute. Then add in the tomatoes, tomato purée, sugar, and crushed cardamom pods. Bring the sauce to a simmer, cover with a lid, and cook for 10 more minutes.
  3. Meanwhile, cook the rice according to the packaging instructions.
  4. Fish out the cardamom pods and discard them. Remove the sauce from the heat, transfer it to the food processor, and process it into a smooth sauce.
  5. Return the sauce to the pan, add the almond flour and prawns, and cook for 5 minutes on medium heat.
  6. Taste and season the sauce, then stir in the double cream and coriander.
  7. Serve warm garnished with coriander and rice on the side.
