Kalamata Olive Tapenade

Tapenade is the name of a condiment consisting of finely chopped olives, and it works great on all types of sandwiches. This sauce is also commonly served with pork chops, chicken dishes, and steak cuts. It can also be used with seafood like shrimp, mussels, and scampi. Tapenade is a salty condiment because of the olives and capers.

Kalamata Olive Tapenade
Ingredients for Kalamata Olive Tapenade:
Kalamata olives - 2 cups (pitted)
Capers - 2 tbsp.
Anchovy - 3
Lemon juice - 2-3 tbsp.
Thyme - 1 tbsp. (dried )
Oregano - 1 tbsp. (dried )
Olive oil - 1/2 cup
Black pepper - to taste
Garlic - 2 cloves
Method of preparing the Kalamata Olive Tapenade:
  1. Blend all the ingredients in a food processor until the olives reach a diced consistency. Fix seasoning to taste.
  2. The tapenade will stay fresh for 1-2 months.
