Summer Sweet Corn Salad

Having a refreshing meal on a hot summer is a good enough reason to wait for the hot season. Here is one summer recipe that will serve you well throughout the scorching months. This salad is super straightforward and quick to make. It has a variety of colorful vegetables along with a healthy dose of sweetcorn and a little pasta. A lemon vinaigrette makes it extra fresh.

Ingredients for dressing:
Olive oil - 1/4 cup
Lemon - 1 (zested and juiced)
Dried basil - 1/4 tsp.
Dijon mustard - 1 tsp.
Salt - 1/8 tsp.
Black pepper - 1/8 tsp.
Parsley - 1/4 cup (chopped)
Ingredients for salad:
Pasta shells - 8 oz.
Sweetcorn - 2 cobs
Cherry tomatoes - 1 pint
Zucchini - 2/3 lb.
Red onion - 1/4 cup (diced)
Avocado - 1
Method of preparing the salad:
  1. Whisk the dressing ingredients together and set aside. Cook and drain the pasta. Let cool.
  2. Slice the corn kernels off the cobs and dice the zucchini, onions and avocado. Slice the tomatoes in half. Mix all the ingredients together, dress in the lemon dressing and serve!
