Melting Potatoes

These two words will automatically make your mouth water. This recipe is all about melting potatoes. Gooey, soft, buttery melting potatoes. They are ultra-crispy on the outside, and the most decadent mashed consistency on the inside. The potatoes are packed-full of spicy garlic, creamy butter, fresh rosemary, and a moistening broth. Here's how to prepare it:

Melting Potatoes
Ingredients:
Potatoes - 2 lb. (Yukon gold is best)
Butter - 2 tbsp. (melted)
Olive oil - 2 tbsp.
Rosemary - 2 tbsp. (chopped)
Salt - 3/4 tsp.
Black pepper - 1/4 tsp.
Chicken broth - 1 cup (low-sodium)
Garlic - 2 cloves (finely minced)
Method of Preparation:
  1. Preheat the oven to 500°F (260°C).
  2. Peel and cut the potatoes to 1-inch thick slices. Pour into a bowl and toss with the olive oil, melted butter, rosemary, salt and pepper.
  3. Oil a deep baking dish and lay the potatoes flat in a single layer. Bake for 30 minutes, flipping after 15.
  4. Pour in the chicken broth and sprinkle with garlic.
  5. Bake again until the potatoes are tender, and the broth slightly reduced - this should be another 15 minutes. Serve warm with extra sauce drizzled on top.
