Easy Cream Cheese Chicken

Easy Cream Cheese Chicken
Ingredients for Easy Cream Cheese Chicken:
Yellow onion - 1 small (finely chopped)
Garlic - 4 cloves (peeled and minced)
Dill - 1 small bunch (leaves only, coarsely chopped)
Cream cheese - 8 oz (cut into 8 pieces)
Chicken breasts - 2 pounds (about 4 breasts)
Kosher salt - as needed
Ground black pepper - as needed (divided)
Olive oil - as needed (divided)
Dry white wine - 1/2 cup
Chicken broth - 1 1/2 cup
Dijon mustard - 2 tsp.
Red pepper flakes - 1/4 tsp.
Method of preparing the Easy Cream Cheese Chicken:
  1. Pat dry the chicken breasts with paper towels and season with salt and black pepper.
  2. In a large frying pan, heat up olive oil over medium-high. Cook the chicken on both sides until golden but not fully cooked. Set aside.
  3. Reduce the heat to medium-low. To the same pan, add the onion and garlic. If needed, add more oil, and cook the onions until tender. Then add 1/2 cup dry white wine and simmer, frequently stirring for another minute.
  4. To the same pan, add the chicken broth, cream cheese, mustard, 1/4 teaspoon black pepper, and 1/2 teaspoon kosher salt. Simmer the sauce until the cream cheese is melted and the sauce becomes smooth.
  5. Transfer the chicken back to the pan and bring the sauce back to a simmer. Then cover with a lid and continue cooking until the chicken is completely cooked. This should take around 3-5 minutes.
  6. Garnish the chicken with dill and sprinkle with red pepper flakes. Serve with a side dish of your choice.
Chef's Tip:
You can use any type of chicken meat in this recipe, but chicken breasts work the best, from our experience.
