Lentils and Herby Ricotta Sandwich

This delicious high-protein sandwich makes for a power-packed lunch. It's filled with green lentils, cucumber, avocado, and ricotta cheese. Suffice to say this is a highly healthy and filling sandwich. You can even pack it up and have it on the go.

Ingredients for Lentil and Herby Ricotta Sandwich:
Lentils - 1/4 cup
Vegetable stock - 1/2 cup
Ricotta cheese - 1/4 cup
Dill - 1 tbsp. (chopped fresh)
Chives - 1 tbsp. (chopped fresh)
Walnuts - 1/8 cup (roughly chopped)
Whole grain bread - 4 slices (or white, wheat, or multigrain bread)
Avocado - 1 (small) (pitted, peeled, and mashed with a fork)
Cucumbers - 12 slices
Lettuce - 2 small handfuls
Salt and Pepper - to taste
Method of preparing the Lentil and Herby Ricotta Sandwich:
  1. Sort through the lentils to remove debris and wash it in a mesh sieve.
  2. Now, add it with the vegetable stock to a small saucepan and bring to a boil. Reduce heat, cover, and cook for 20 minutes. Make sure the lentils are tender. Strain and set aside.
  3. Stir together the ricotta with the dill, chives, and walnuts, and set aside.
  4. Spread the ricotta evenly over 2 pieces of bread. Over the other 2 pieces of bread, spread the mashed avocado evenly. Next, season the avocado with salt and pepper. Top the ricotta with the lentils. Then top with the cucumber and lettuce and close the sandwich.
Chef's Tip:
Wrap this sandwich in parchment paper for packing because the lentils can get everywhere.
