Fruit Pizza

Ingredients for crust:
Unsalted butter - 1/2 cup (softened to room temperature)
Sugar - 1/3 cup
Egg - 1 (large )
Vanilla Extract - 1 tsp.
All-Purpose flour - 1 1/2 cups
Salt - 1/4 tsp.
Baking powder - 1 tsp.
Baking soda - 1/2 tsp.
Cornstarch - 1 1/2 tsp.
Ingredients for topping:
Unsalted butter - 1/4 cup (softened to room temperature)
Cream - 1-2 tbsp. (or milk)
Vanilla Extract - 1 tsp.
Cream cheese - 8 oz. (softened to room temperature)
Method of preparing the topping:
  1. In a large bowl, mix cream and softened butter until it’s nice and smooth.
  2. Add the sugar until the mix is fluffy and light in color, then beat in the egg and vanilla.
  3. In a medium bowl, whisk together flour, salt, baking powder, baking soda, and cornstarch.
  4. Slowly add the dry ingredients to the wet ingredients. Once combined, cover the dough tightly and chill in the refrigerator for at least 30 minutes.
  5. Preheat oven to 350°F (180°C) degrees. Spray a 12-inch pizza pan with cooking spray.
  6. Press the chilled cookie dough onto the pizza pan in an even flat circle.
  7. Bake for 18-20 minutes or until the edges are very lightly browned. In another bowl, beat the cream cheese and butter until smooth.
  8. Add the confectioners’ sugar, vanilla, and 1 tbsp. cream. Spread in a thick layer over the crust and decorate with fruit.
Chef's Tip:
For the fruit assortment, use fresh fruits such as bananas, blueberries, kiwi, strawberries, peaches, and pineapple.
