Ingredients for Ceviche-Stuffed Avocado:
Shrimp - 1 cup (cooked)
Tomatoes - 1/2 (diced)
Red onion - 2 tbsp. (diced)
Lime juice - 1 tbsp.
Cilantro - to taste (for garnish)
Avocado - 1/2
Method of preparing the Ceviche-Stuffed Avocado:
  1. Chop the shrimp into bite-sized pieces then combine with the diced tomatoes, onions, lime juice and cilantro in a bowl. Stuff the halved avocado with the ceviche, mix and enjoy!
