Quick Chilled Cantaloupe Soup
Ingredients for Quick Chilled Cantaloupe Soup:
Cantaloupe - 3 cups (cubed)
Yogurt - 1/4 cup
Ground ginger - 1/8 tsp.
Lime zest - 2 tsp.
Lime juice - 1 tbsp.
Honey - 1 tsp.
Basil leaves - 2-3
Kosher salt - 1 pinch
Water - 2-3 tbsp. (to thin the soup to desired consistency)
Method of preparing the Quick Chilled Cantaloupe Soup:
  1. In a blender, combine all ingredients except water. Puree until smooth.
  2. Adjust consistency with water, if needed. Serve chilled.

You can enjoy this as a smoothie or pour it into popsicle molds and enjoy frozen.
