Spanakopita- Greek Appetizers

Each cultural cuisine has its own version of a stuffed pastry with fillings. And what can you expect of Greek cuisine, if not a super light and delightfully cheesy phyllo dough pastry? The Tzaziki dip will tingle your tongue while keeping everything light.

Ingredients for Tzaziki dip:
Yogurt - 1/2 cup
Cucumber - 1 (grated)
Olive oil - 2 tbsp.
Lemon juice - 1 tsp.
Dill - 1 tbsp. (chopped)
Garlic - 1 clove (minced)
Salt and Pepper - as needed
Ingredients for pastries:
Onions - 1/2 (chopped)
Garlic - 1 clove (minced)
Spinach - 10.5 oz. (shredded)
Cumin - 1 tsp.
Feta cheese - 3.5 oz.
Phyllo dough - 6-8 sheets
Olive oil - as needed
Salt and Pepper - as needed
Method of preparing the Tzaziki dip:
  1. Drain the cucumber grates. Mix all ingredients together and let sit until serving.
Method of preparing the pastries:
  1. Preheat oven to 400°F. Sauté the onion and garlic until golden brown.
  2. Add the spinach and cumin and fry for 7-8 minutes, until steaming. Let cool.
  3. Pour the spinach mixture into a bowl and add the feta cheese.
  4. Cut long strips of the dough, 2 inches wide. Brush one sheet with olive oil and stack another on top. Place a dollop of the spinach mixture in the middle, fold into a triangle and keep folding over and over until you finish the strip. Keep doing so until you finish the filling.
  5. Brush a baking dish with oil and arrange the triangles evenly spaced. Bake 10 minutes or until golden brown.
