Mushroom Puff Pastry Boats

What makes this recipe exceptionally easy, despite the use of dough, is the mushrooms. They are one of the most forgiving vegetables when it comes to cooking- they're simply almost impossible to destroy.

Ingredients for pastries:
Butter - 1 tbsp.
Olive oil - 1 tbsp.
Button mushrooms - 1 lb (stemmed and sliced)
Thyme - 2 sprigs, 2 tbsp.
Garlic - 1 clove (minced)
Peppercorn - 1 tsp.
Red wine vinegar - 1 tsp.
Puff pastry - 1 sheet
Egg wash - 1 (1 yolk with some water)
Swiss & Gruyer cheese - 9 tbsp. (grated)
Method of preparing the pastries:
  1. Heat the oil and butter in a pan. When they shimmer, add the mushrooms and the thyme. Cook for 10 minutes.
  2. Add the garlic and pepper and after a minute's cooking, remove from heat and add the vinegar. Discard the thyme.
  3. Preheat oven to 400°F. Thaw the dough. Cut it to create 9 squares, 3x3''. Arrange them, evenly spaced, on a lined baking sheet.
  4. Lightly score a ½-inch border around the edges of each square, making sure not to cut all the way through. Brush the edges with egg wash. preperation
  5. Fill the square with grated cheese, a spoonful of the mushroom mix and another topping of cheese.
  6. Bake for 15-20 minutes or until golden brown and puffy. You can garnish with some thyme.
