Brie and Jam Pastry Bites

Brie is wonderful when it's baked, but nothing is comparable to this heavenly brie-and-jam combination on a stick. Trust me - looks won't deceive you this time.

Ingredients for Bite-sized Baked Brie with Jam Filling:
Puff pastry - 2 sheets (thawed but still cold)
Brie cheese - 1/2 wedge (around 4 ounces) (cold)
Jam - 1/3 cup (any flavor of your choice)
Eggs - 1 (whisked)
Milk - a splash
Sea salt - a pinch (coarse)
Method of preparing the Bite-sized Baked Brie with Jam Filling:
  1. Preheat oven to 375°F. Cut a sheet of puff pastry into 12 rectangles, and then cut each one in half, so that you have 24 rectangles in all. Whisk the egg with a dash of milk to make egg wash.
  2. Brush half of the rectangles with egg wash, and place the stick in such a way that half of it will stick out of the pastry. Add a slice of brie cheese, followed by a dollop of jam, and another puff pastry rectangle (the egg wash will act as glue). Using a fork, press the edges together and prick the top lightly.
  3. Place the brie pockets in the preheated oven, brush them with egg wash and add a touch of coarsely ground sea salt. Bake for 12-14 minutes, until golden brown, and let cool slightly before serving.
