Balsamic Pickled Figs

I'm not a big fan of figs- I prefer them in their dried form with no added sugar. So discovering yet another form of figs I can enjoy was a reason to celebrate for me, and I knew I had to share this joy with you. Are you bold enough for pickled figs?

Balsamic Pickled Figs
Ingredients for pickled figs:
Figs - 24 pieces
Sugar - 1 1/2 cups
Water - 2 cups
Balsamic vinegar - 3/4 cup
Method of preparing the pickled figs:
  1. In a big pot, melt the sugar in the water and vinegar. Wash the figs and add them in.
  2. Cook them on low flame for 10 minutes, stirring occasionally. Meanwhile, boil water in another large pot.
  3. Remove the figs from the flame and transfer them into jars. Cover them in the sauce they were cooked in, leaving an inch of air.
  4. Lid the jars and insert them into the boiling water for curing. Make sure they're fully submerged and let them sit and cook for 15 minutes.
  5. Remove from heat and store in a cool, dark place. After 3 weeks time, your pickled figs should be ready.
