"Rainbow chard" is a popular monicker for a mix of white-stemmed Swiss chard, red chard, and golden chard. When you mix these three together, they pack in a lot of flavors. In this easy fridge method, we will show you to pickle rainbow chard.
Trim leaves from the Swiss chard. Then cut the stems into 2-inch pieces and place in a large jar.
Next, add the onion, pickling spices, celery seed and mustard seeds.
Combine sugar, vinegar and water in a small saucepan and bring to a boil. Cook for 1 minute. Keep stirring to dissolve the sugar. Now pour it carefully over the chard mixture.
Allow it cool completely then refrigerate overnight. Make sure that you keep it covered and keep stirring occasionally.
