Spicy Pickled Corn

Salt preserved corn that will tingle your tongue! This will be a perfect addition to any salad, and it can also be served as a starter or a small snack with crackers. We would also suggest serving this with tequila as an appetizer for a festive dinner.

Spicy Pickled Corn
Ingredients for pickled corn:
Fresh corn - 3 cobs
Salt - 3 tbsp.
Garlic - 5 cloves
JalapeƱo - 1 (cut into thin strips)
Black pepper - 1 tsp.
Vinegar - 1 1/2 cups
Water - 3 cups (add more if needed)
Method of preparing the pickled corn:
  1. Cut the corn into rings or quarters (with the cob!) and set aside.
  2. Sterilize jars in boiling water. Boil the rest of the ingredients and add the corn to cook. Simmer 10 minutes.
  3. Divide the solids into jars and cover with the liquid. Lid and process in a bath of hot water. Store in the fridge after opening.
