If the way to your lover's heart is through their stomach, this strawberry ravioli will put you straight through the highway! A sweet pink dough, filled with savory cheese, and the hours you took to make it will create the perfect romantic dinner.
Mash the strawberries with 2 tbsp water in a food processor.
Put the flour in a bowl, create a well and break in the eggs. Add the strawberries and mix until you have a dough. Knead on a floured surface.
Cover and let sit 10 minutes. In another bowl, mix the ricotta, mozzarella and garlic. Season and set aside.
Divide the dough into 2 equal parts. Set one aside and knead the other on a floured surface until paper thin. Put dollops of the cheese mix evenly spaced, creating rows and lines.
Knead the remaining dough to the same side and lay it over. Cut the dough into squares, each containing a dollop of cheese.
Boil salted water and cook the ravioli for 5 minutes. Garnish and serve.
Chef's Tip:
Use a pasta machine if you have it to roll the dough thin and even.
