Easy Vegetable Lo Mein

Vegetable Lo Mein for a quick, easy, and satisfying meal. It's the perfect dish when you are in the mood for something quick and simple at the end of the day. This recipe requires just a few ingredients and is just so delicious. Do make sure to use these noodles specifically, you can find them sold in bags. They are thicker and much much sturdier than classic instant ramen noodles, which means they can carry far more liquid.

Easy Vegetable Lo Mein
Ingredients for Easy Vegetable Lo Mein:
Lo mein noodles - 1 lb.
Soy sauce - 8 tsp.
Sugar - 6 tsp.
Carrots - 1/3 cup
Bamboo shoots - 1/3 cup
Bean sprouts - 1/3 cup
Celery sticks - 1/3 cup
Chinese cabbage - 1/3 cup
White wine - 6 tsp.
Fish sauce - 5 tsp.
White pepper - to taste
Garlic - 2 cloves (minced)
Ginger root - 1/2-inch piece (peeled and minced)
Green onions - 1 tbsp. (just the white roots)
Vegetable oil - 1 tbsp.
Snow peas - 1/3 cup
Method of preparing the Easy Vegetable Lo Mein:
  1. Cook the noodles, stirring occasionally, for 8-9 minutes. Drain and wash. Dress in 1 tbsp vegetable oil.
  2. Finely chop the onion roots. Add them into a bowl with ginger and soy sauce, sugar, wine, fish sauce, sesame oil, and some white pepper.
  3. Cut the rest of the vegetables into matchsticks. Cook them with the garlic and some vegetable oil for no longer than 5 minutes, until steaming. Add the noodles and the sauce, mix everything and serve.
