Shrimp and Pineapple Noodles

It's no secret that shrimp and coconuts go hand in hand together, but did you know other tropical fruits, especially pineapples, also complement shrimp very well? If you've never tried this combination, this easy-to-make shrimp and pineapple noodles recipe is a great introduction. It's perfect when you want to try something different for a weekday dinner.

Shrimp and Pineapple Noodles
Ingredients for Shrimp and Pineapple Noodles:
Rice noodles - 4 servings (or any other noodles of your choice)
Shrimp - 1 lb (raw)
Pineapple - 1/2 (cut into cubes)
Kosher salt - 1 tsp.
Soy sauce - 2 tbsp.
Fresh ginger - 1 tbsp. (grated)
Vegetable oil - 2 tbsp.
Pineapple juice - 2 cups
Chili garlic sauce - 1 tbsp.
Basil leaves - 1 cup
Cucumber - 1 medium (thinly sliced)
Red onion - 1/2 small (finely sliced)
Lime - 1 (cut into wedges)
Method of preparing the Shrimp and Pineapple Noodles:
  1. Cook the noodles according to packaging instructions.
  2. Place the pineapple slices and shrimp into a bowl and toss with salt, soy sauce and ginger.
  3. In a large frying pan, heat oil on medium heat. Cook the pineapple and shrimp, until the pineapple is brown on all sides and the shrimp is fully cooked.
  4. In the same frying pan, combine the pineapple juice and the chili-garlic sauce, stirring frequently until the liquid is reduced by half. This should take around 10-15 minutes. Remove the pan from the heat.
  5. Stir the pineapple and shrimp with the basil leaves.
  6. Divide the noodles into bowls, top with the pineapple shrimp mix and top with the rest of the ingredients.
