Prawn and Corn Fritters

These are not your boring everyday fritters. Made with fresh corn, herbs, and shrimp, these crispy and savory fritters are bursting with flavor. They make an excellent filling breakfast, lunch, or dinner!

Prawn and Corn Fritters
Ingredients for Prawn and Corn Fritters:
Sour cream - 3/4 cup
Lemon juice - 3 tbsp.
Kosher salt - as needed
Corn flour - 3/4 cup
Baking powder - 1/2 tsp.
Old Bay seasoning - 1/2 tsp.
Egg - 1
Buttermilk - 1 cup
Scallions - 4 (thinly sliced)
JalapeƱo - 1 (seeded and finely chopped)
Small shrimp - 1/2 pound (peeled, deveined and coarsely chopped)
Fresh corn kernels - 1 1/2 cup
Cheddar cheese - 3/4 cup (grated)
Canola oil - for frying
Cilantro - a handful (coarsely chopped)
Lemon - 1 (cut into wedges)
Method of preparing the Prawn and Corn Fritters:
  1. Combine lemon juice, sour cream, and 1/4 teaspoon salt. Set aside.
  2. In a large bowl, mix together flour, 1/2 teaspoon salt, baking powder, and Old Bay seasoning. In a separate bowl, stir together the egg and buttermilk, and add them to the dry ingredients.
  3. Stir in the jalapeƱo, scallions, corn, shrimp, and cheese.
  4. Heat 2 tbsp oil in a large frying pan on medium heat. Working in 1/4 cup batches, start frying the fritters. Cook until golden. This should take around 4 minutes on each side. Add more oil as needed.
  5. When cooked, transfer the fritters to paper towels and season with salt. Garnish with cilantro and serve with the sour cream sauce.
