Spicy Honey Roasted Carrots

These super delicious honey-roasted carrots will make for an exciting side dish during your Thanksgiving dinner. Also called candied carrots, they are super easy to make and are incredibly tasty. Kids will love this dish, so if you have a few young ones coming over for Thanksgiving, make sure to serve them these honey-roasted carrots.

Ingredients for Spicy Honey Roasted Carrots:
Butter - 1 tbsp. (or oil)
Honey - 3 tbsp.
Sea salt - 1/4 tsp.
Black pepper - 1/4 tsp.
Cayenne pepper - 1/8 tsp.
Carrots - 2 lbs. (cut into 2-inch lengths)
Chives - to garnish (minced)
Method of preparing the Spicy Honey Roasted Carrots:
  1. Preheat oven to 425°F (220°C). In a large ovenproof skillet, melt the butter over medium-high heat. Next, add the honey, salt, pepper, and cayenne and bring to a boil for 2 minutes. Then, add the carrots and toss to coat in the sauce.
  2. Once coated remove from heat and transfer to the oven for a 20-minute bake. Then, remove the pan from the oven and continue to cook the carrots on your stovetop for 2 minutes over medium-high heat. This will help caramelize the honey. As the sauce just barely starts to darken, remove the pan from the heat.
  3. Sprinkle with some minced chives and serve.
Chef's Tip:
If you don't have a large ovenproof pan, you can start on the stove top and then move the carrots to a baking sheet to cook in the oven.
