Ingredients for Summer Berry and Mint Popsicle:
Raspberries - 1 cup
Blackberries - 1 cup
Strawberries - 1 cup (sliced)
Sugar - 1/3 cup
Water - 1/3 cup
Lemon juice - 2 tbsp.
Fresh mint leaves - 2 tbsp. (minced)
Method of preparing the Summer Berry and Mint Popsicle:
  1. In a bowl combine raspberries, blackberries, strawberries, mint, and lemon juice.
  2. Mash the berries with the back of a wooden spoon. Let the mixture rest for 30 minutes.
  3. Combine the water and sugar in a saucepan to make a syrup. Let the mixture simmer until the sugar dissolves.
  4. Let cool for 5 minutes. Combine the syrup with the berry mixture.
  5. Pour the mixture into the popsicle molds and freeze for 6 hours.
Chef's Tip:
You can also add any clear alcoholic drink, or enjoy this as a smoothie!
