Poached Pomegranate Spiced Pears

Of the many spices that go together incredibly well with pears, anise is one of my favorites. This poached pomegranate spiced pears are the perfect little appetizer or dessert, depending on the occasion. Best of all, you can use your rice cooker to make them super-easily and quickly. Learn how below.

Serves: 4
Difficulty Level: Low
Ingredients:
Pear - 2 firm (peeled, halved and cored)
Cinnamon - 1 stick
Apple cider - 2 cups
Clementine - 1 (peel only)
Cardamom - 3 black pods
Ginger - 1-inch piece, fresh (peeled)
Ingredients for orange cashew cream:
Cashews - 1 cup (raw)
Orange juice - 1/4 cup
Honey - 1 tbsp.
Water - 1 tbsp.
Method of Preparation:
  1. Place all of the ingredients into the rice cooker bowl, making sure that the pear halves are completely covered.
  2. Close the lid, and switch the rice cooker on, setting it to cook white rice.
  3. Switch it off after about 50 minutes, or when the pears are tender.
  4. Open the cover and turn the pears over, letting them sit for about an hour.
  5. Turn them over again, and let them rest for another hour. Serve with orange cashew cream, if desired.
Method of preparing the orange cashew cream:
  1. Soak cashew nuts in a bowl of water for 1 hour. Drain.
  2. Place drained cashew nuts, orange juice, honey and water in a blender and blend until completely smooth.
