Kid-Approved Chicken Meatballs

Few foods are as versatile as a meatball. You can use them in so many ways: in subs, with pasta, or as an appetizer. This specific recipe uses ground chicken and grated broccoli stems, so it's relatively leaner while still remaining soft and juicy. Your kids will love these delicious chicken meatballs in whichever dish you decide to serve them.

Kid-Approved Chicken Meatballs
Ingredients for Kid-Approved Chicken Meatballs:
Ground chicken - 1 lb.
Broccoli stems - 1/2 cup (peeled and grated)
Breadcrumbs - 1/2 cup
Parmesan cheese - 1/4 cup (grated)
Olive oil - 2 tbsp.
Egg - 1
Garlic powder - 1/2 tsp.
Salt - to taste (optional)
Method of preparing the Kid-Approved Chicken Meatballs:
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thoroughly mix together all the ingredients in a large bowl.
  3. Wet your hands and measure out 1 tbsp worth of the mixture per meatball. Roll it into a meatball and place it onto the prepped baking sheet.
  4. Bake for 15-20 minutes. They should be nice and browned.
  5. Use the meatballs in your pasta recipe, insert a toothpick in them to serve as an appetizer, or pack a few of them in your child's lunchbox - it's up to you.
