Oven Fried Chicken

Fried chicken is delicious, but making it at home can be quite wasteful, not to mention that all that oil you use for frying renders the chicken not very healthy. A great homemade alternative to fried chicken is oven-fried chicken. It's more economical and quicker to prepare too! Plus you can adjust the spices and marinade you use, so it's completely tailored to your tastebuds.

Oven Fried Chicken
Ingredients for Oven Fried Chicken:
Cooking spray - to grease the tin
Salted crackers - 20 (about 1/2 cup) (pulsed in a food processor)
Cornflakes - 2 1/2 cups (pulsed in a food processor)
Garlic powder - 1/2 tsp.
Cayenne pepper - 3/4 tsp.
Chicken breasts - 4 medium (skinless)
Chicken thighs - 4 (skinless)
Dijon mustard - 1 tbsp.
Plain yogurt - 1 cup
Salt - 1/2 tsp.
Method of preparing the Oven Fried Chicken:
  1. Preheat the oven to 375°F (190°C). Spray the baking sheet with cooking spray.
  2. In a shallow container, stir together the cracker crumbs, cornflake crumbs, garlic powder, and cayenne pepper. Set aside.
  3. Pat-dry the chicken with paper towels.
  4. Mix the egg whites, mustard, yogurt, and salt in a bowl. Toss chicken the pieces in the yogurt mixture, coating the chicken thoroughly in the marinade.
  5. Now dip each chicken piece in the cracker and cornflake mixture. Place the chicken pieces on the baking sheet so that they don't overlap and spray with more cooking spray.
  6. Bake the chicken for 45-50 minutes, or until deep golden brown.
