Mini Caramel Apple Bites

Apples and caramel are just as emblematic of fall desserts as pumpkin and cinnamon. Surprise your Thanksgiving guests with these mini caramel apple bites!

Ingredients for Caramel Apple Bites:
Unsalted butter - 8 tbsp. (melted)
Apple - 4 cups (peeled and chopped)
Granulated sugar - 1/3 cup
Brown sugar - 1/4 cup
All-Purpose flour - 2 1/4 tbsp.
Ground cinnamon - 1/2 tsp.
Nutmeg - 1/4 tsp.
Caramel sauce - as needed (to drizzle)
Method of preparing the Caramel Apple Bites:
  1. Preheat the oven to 350°F.
  2. Grind up the gingersnaps in a food processor.
  3. Grease 24 mini-muffin tins.
  4. Mix the butter and gingersnaps together in a bowl.
  5. Once mixed well, press into the muffin tins.
  6. Bake for 5 minutes, then allow to cool.
  7. Finely chop the apples in the food processor. Combine with 1/4 cup brown sugar, 1/3 cup sugar, 1/2 teaspoon cinnamon, 2 1/4 tablespoons flour.
  8. Cook down over medium heat.
  9. Scoop small spoonfuls into each muffin tin, top with any leftover cookie crumble, and bake for 10 minutes.
  10. Drizzle with caramel.
