In a pot, fry the onions and pepper in the canola oil over medium heat. Season with salt and pepper.

When the onions become translucent, add the tomatoes. Cook for 5 minutes, or until the tomato juice evaporates.

Add the tomato paste to the pot. After one minute of cooking, slowly pour the coffee into the pot.

Add the rest of the ingredients. Turn off the flame, transfer the contents of the pot to a blender, and blend until you reach a smooth and even consistency.

Pour the mixture back into the pot and cook over a medium heat for 15 minutes, until the mixture becomes a thick sauce.
