Pork Pineapple Skewers

Welcome summer the right way with these pineapple and pork skewers, sure to become a BBQ staple on your Sunday afternoons. If you're using wooden skewers make sure to soak them in water beforehand.

Pork Pineapple Skewers
Ingredients for skewers:
Pork fillet - 14 oz. (cut into 2 inch chunks)
Pork seasoning - of your choice
Ground Allspice - 1 tsp.
Lime zest - from 1 lime
Lime juice - from 1 lime
Salt and Pepper - as needed
Lime - 2 (cut into wedges)
Pineapple - 1/2 (cut into 2 inch chunks)
Vegetable oil - 1 tbsp.
Basmati rice - 7 oz.
Black beans - 14 oz. can (drained and rinsed)
Method of preparing the skewers:
  1. Mix together the pork, seasoning, allspice, lime zest and juice, and some salt and pepper. Thread the pork and pineapple onto metal skewers (or pre-soaked wooden skewers) and brush with the oil.
  2. Cook rice following pack instructions. Drain well, then put back in the saucepan with the beans, stir and keep warm.
  3. Meanwhile, heat a griddle pan until very hot. Cook the skewers for 3 mins on each side or until nicely charred and the pork is cooked through. Alternatively, you can grill them on a medium-high setting.
  4. Serve skewers with the beans and rice, extra chilli sauce, if you like, and lime wedges for squeezing over.
Chef's Tip:
You can add green bell peppers for a contrast to the pineapples, but we think the pineapple-pork duo is a winner that doesn't need any sidekicks.
