Quick Fermented Asparagus

Asparagus make outstanding pickles! This simple 5-ingredient recipe shows you a great way to ferment asparagus with oranges and green onions. You can enjoy the bright, tangy, and slightly sweet taste of this pickled goodness with any type of grilled meat or fish, or even inside sandwiches or hot dogs!

Quick Fermented Asparagus
Ingredients for Quick Fermented Asparagus:
Asparagus - 1 1/2 pounds
Kosher salt - 1 1/2 tsp.
Green onions - 2 (cut into 3-in pieces)
Orange - 1-2 slices
Water - enough to cover the vegetables (filtered)
Method of preparing the Quick Fermented Asparagus:
  1. Cut the stalks so that they stand 3/4 to 1 inch below where the jar neck begins to narrow. Insert into jars and add the salt.
  2. Fill the jar with water, leaving a small gap at the top.
  3. Top the asparagus with green onions. Place an orange slice or two on top of the asparagus. This will prevent the vegetables from floating to the top, and it also adds flavor.
  4. Double-check and make sure that the ingredients are fully submerged in water. If not, add more water.
  5. Place the jar on a plate. Cover the jar with a piece of cloth (cheesecloth works great for this).
  6. Let the asparagus ferment in a dark and dry place for 2-4 days until you enjoy the sourness. Then seal the jar with a lid and refrigerate.
Chef's Tip:
Check the fermented asparagus daily. If a film forms on top, skim it with a spoon and discard the film. If you see any signs of mold, discard the asparagus and start over.
