Pepperoni Pasta Salad

This pepperoni pasta salad is a fun dish you can try on some weeknights. The pepperoni gives it a rich and peppery flavor balanced well with mild spinach, mozzarella, and pasta. It’s quick, very filling, and flavorful. Enjoy!

Ingredients for Pepperoni Pasta Salad:
Bowtie pasta - 8 oz.
Salt - 1/2 tbsp.
Baby spinach - 4 oz. (fresh)
Kidney beans - 15 oz. can
Pepperoni - 3 oz.
Mozzarella - 4 oz. (cubed)
Grape tomatoes - 1 pint
Italian dressing - 6 oz. (or Caesar dressing)
Parmesan cheese - 1 tbsp. (optional)
Peppers - to taste (freshly cracked)
Method of preparing the Pepperoni Pasta Salad:
  1. Cook the pasta in salted water and let drain.
  2. Prepare the rest of the salad while the pasta is cooking. chop the spinach leaves and place them in a large bowl. Next, slice the grape tomatoes in half and rinse and drain the kidney beans. In the bowl with the spinach, add the beans, tomatoes, pepperoni, and cubed mozzarella.
  3. Add the pasta to the bowl with the rest of the salad ingredients, after it is cooked, cooled, and drained. Toss the ingredients properly. Add the salad dressing and then toss again.Sprinkle some freshly cracked pepper over the top. Serve with a little Parmesan.
