Cloud Eggs
Ingredients for Cloud Eggs:
Eggs - 2
Parmesan cheese - 1 tbsp. (shredded)
Salt and Pepper - to taste
Method of preparing the Cloud Eggs:
  1. Preheat the oven to 360°F (180°C).
  2. Crack and separate each egg. Place each egg yolk in a ramekin or small glass, to keep its shape until needed.
  3. Using a hand mixer or a stand mixer, beat the egg whites to stiff peaks.
  4. Add the grated parmesan to the egg whites and carefully and slowly fold it into the egg whites.
  5. Line a baking sheet. Spoon the egg white mixture onto the lined baking sheet so that they form a cloud shape. Using a tablespoon, create a small dip in the center of each cloud - this is where the egg yolks will go.
  6. Bake the egg whites for 5 minutes, or until slightly golden on top.
  7. Now it's time to add the yolks. Transfer the egg yolks to the middle of each baked egg white cloud. Bake for 3-4 more minutes, or until the egg yolks reach your desired consistency.
  8. Remove from the oven and serve right away.
