Roasted Squash Soup

This warm and comforting soup recipe comes to the rescue on cold winter days. This roasted squash soup is a light meal made with vegetables and herbs. Roasted Squash Soup
Ingredients:
Butternut squash - 1 (cut into cubes)
Oil - 2 tsp.
Celery - 1 cup (diced)
Onion - 1 1/2 cup (diced)
Spinach - 1 1/2 cup
Garlic - 2 cloves (minced)
Carrot - 1 cup (diced)
Water - 1 cup
Sage - 1 tsp.
Nutmeg - 1/2 tsp.
Ground black pepper - to taste
Method of Preparation:
  1. Roast the squash in a pan with one teaspoon of oil.
  2. Move the squash into the oven and continue to roast at 390°F (200°C) for 40 minutes or until brown.
  3. Let the squash cool for a few minutes, then mash it into a puree using a blender or food processor. Set aside for now.
  4. Add the remaining oil into a pot and sauté the celery, onion, spinach, garlic, and carrots over medium heat until soft.
  5. Add broth, water, spices, and the squash puree to the pot and simmer for 10 minutes before serving.
