15-Minute Chickpea Salad

This salad combines many fresh vegetables in one delicious bite. It makes for a healthy meal to have any time of the day. This salad includes chickpeas (garbanzo beans), juicy tomatoes, refreshing cucumbers, and creamy avocados. The garbanzo beans are a rich source of vitamins, minerals, and fiber. They help in digestion and aid in weight management.

Ingredients for Chickpea Salad:
Cucumber - 1 medium-sized
White onion - 1/2
Cherry tomatoes - 1 cup
Parsley - 1 cup
Lemon juice - 4 tbsp.
Olive oil - 2 tbsp.
Salt - to taste
Ground black pepper - to taste
Italian seasoning - 1/2 tbsp.
Smoked paprika - 1/2 tbsp.
Feta cheese - 2 tbsp. (optional)
Avocado - 1/2 medium (optional)
Method of preparing the Chickpea Salad:
  1. Cut the veggies and mix everything in a big bowl.
  2. Add lemon juice and stir gently.
  3. Add remaining salad ingredients and gently toss to combine.
  4. Mix the dressing with the salad and enjoy hot or cold.
