Corned Beef Hash

This corned beef hash recipe is possibly the best way to use up leftover corned beef. This dish makes a delicious and filling breakfast, lunch, or dinner for the whole family. Of course, you can also buy some corned beef at the deli counter, just ask to have it cut into thick slices, and you can enjoy this delicious dish anytime.

Corned Beef Hash
Ingredients for Corned Beef Hash:
Unsalted butter - 2-3 tbsp.
Onion - 1 medium (about 1 cup) (finely chopped)
Potatoes - 2-3 cups (cooked and chopped)
Cooked corned beef - 2-3 cups (finely chopped)
Salt and Pepper - to taste
Parsley - a handful (finely chopped)
Method of preparing the Corned Beef Hash:
  1. Heat the butter in a large frying pan over medium heat. When it has melted, add the onions and cook until soft and translucent. This will take around 2-3 minutes.
  2. Add the chopped cooked potatoes and corned beef to the same frying pan. Spread the beef and potatoes evenly through the pan.
  3. Crank up the heat to high and press down with a spatula. Let the bottom brown nicely, and then flip it with a spatula section by section.
  4. Press down with the spatula again, browning the meat and potatoes on the other side as well. Continue cooking it this way until all of the hash is nicely browned.
  5. Remove the frying pan from the heat, then stir in the chopped parsley. Season with salt and pepper to taste.
  6. Serve warm topped with a fried or poached egg.
