Sweet Pickled Pears

You'll be the judge on this one! Is this a pickled salad, or more so a sophisticated twist on a pear compote dessert? We think this versatility is a true blessing, as you can use these pickled pears in more than just one dish. Get creative!

Sweet Pickled Pears
Ingredients for pickled pears:
Lemon zest - from 1 lemon
Lemon juice - 5 tbsp.
Mirin - 2 tsp. (optional)
Salt - 1 tsp.
Sugar - 1 1/2 cups
Pears - 2 Ibs (peeled and sliced)
Whole cloves - 1 tsp.
Method of preparing the pickled pears:
  1. Put the lemon zest, lemon juice, vinegar, mirin, salt, sugar, clove, and anise in a bowl and set aside.
  2. In another pot, fill up enough water to cover the pears (don't put them in yet), boil the water, and then add the pears. Continue cooking on medium heat until tender.
  3. Divide the pears into jars. Don't discard the water. Let the pears cool in the jars.
  4. Add the bowl's content into the pot and boil till the sugar dissolves. Pour over the pears in the jars, lid and chill.
  5. The pears will be ready in 5 days and will last a month.
