If you prefer your garlic less spicy, try this pickled garlic, it makes such a delicious snack or condiment. All you need is a ton of garlic, some everyday spices and ingredients, some jars, and a little bit of patience.
In a large pan, bring the water to a boil. Add in the garlic and boil for 1 minute.
Divide the coriander seeds, allspice, peppercorns, chilis, and the bay leaf among 3 sterilized jars.
Drain the garlic and pack it into the three jars, leaving a small gap on the top.
In another pan, combine the sugar, salt, and vinegar. Bring the brine to a boil, then spread the hot liquid among the jars. The garlic should be completely covered in brine but a gap should be left at the top of the jar. Seal the jars.
Store the jars in the refrigerator for 1 month before use. The garlic will stay fresh in the fridge for 1 year.

This recipe can be easily scaled up or down depending on how much garlic you want to pickle.
