Homemade Pickled Ginger

Making pickled ginger is easier than you think, and it's so much better than the store-bought stuff too, that always has a strange aftertaste. This easy recipe will teach you to make authentic pickled ginger at home.

Homemade Pickled Ginger
Ingredients for Homemade Pickled Ginger:
Salt - 1 tbsp.
Sugar - 1/2 cup
Beet - 1 small (peeled and halved)
White peppercorns - 1/2 tbsp.
Ginger slices - 2 cups (peeled and sliced 1/8-inch thin)
Method of preparing the Homemade Pickled Ginger:
  1. Combine all the ingredients except for the ginger in a pan. Bring to a boil.
  2. Add the ginger and lower the heat to a simmer for 30 minutes.
  3. Remove from the heat and let it rest for 1 hour until cooled to room temperature.
  4. Transfer everything to jars and store in the fridge for at least 12 hours before use.
  5. This pickled ginger will stay fresh for 1 month.
Chef's Tip:
Any type of small chili will do.
