Lemon Pickled Shrimp

Pickled shrimp are an underrated Southern dish everyone should try. Lemony, a bit spicy, and oh so refreshing, these shrimp work equally well on a summer barbecue and a New Year's party. The obvious advantages of this dish are also its versatility and ease of preparation. These shrimp make a delicious appetizer, but you can also serve them alongside a side dish or salad for weekday dinner or top a slice of toasted bread with them for a quick lunch or breakfast.

Lemon Pickled Shrimp
Ingredients for Lemon Pickled Shrimp:
Sweet onion - 1 (thinly sliced)
Lemon - 1 (thinly sliced)
Canola oil - 1/2 cup
Capers - 1/4 cup (with brine)
Celery seeds - 3/4 tsp.
Sugar - 1/2 tsp.
Salt - 1/2 tsp.
Tabasco sauce - to taste
Shrimp - 1 1/2 pound (peeled and cooked)
Method of preparing the Lemon Pickled Shrimp:
  1. In a large bowl, combine all the ingredients except for the shrimp. Toss the shrimp in the marinade and coat it well.
  2. Transfer into sealable containers and refrigerate for at least 24 hours, giving the shrimp an occasional stir.
  3. Serve the shrimp chilled. They will stay fresh for a week.
