One Pot Cheeseburger Pasta
Ingredients for One Pot Cheeseburger Pasta:
Olive oil - 1 tbsp.
Yellow onion - 1/2 (diced)
Salt and Pepper - to taste
Garlic powder - 1 1/2 tsp.
Tomato paste - 2 tbsp.
Beef broth - 4 cups (divided)
Petite diced tomatoes - 1 (14-oz.) can
Pasta macaroni - 12 oz.
Cheddar cheese - 2 cups (shredded)
Green onions - 2 (for garnish)
Method of preparing the One Pot Cheeseburger Pasta:
  1. Fry the onion and beef with olive oil over medium heat, until the beef has a nice brown color. The onion should be soft and translucent. Add the garlic powder, salt, and pepper.
  2. Add the tomato paste and Worcestershire sauce, and stir until the paste is darkened. Add 3 1/4 cups of beef broth, the canned tomatoes, salt, and pepper. Stir to combine and bring to a boil.
  3. Add the macaroni and cook it until tender. Add the remaining broth beef as needed, a few tbsp at a time. Remove from the heat and stir in 1 1/2 cups of the cheese. Fix the seasonings if needed.
  4. Add the remaining 1/2 cup cheese. Cover and let sit until the cheese on top is melted. Garnish and serve.
Chef's Tip:
For a crusty top, preheat the broiler, and cook everything in an oven-proof casserole dish/dutch oven. Skip the garnish and instead of letting the cheese top melt, broil it for 3 minutes on the middle rack.
