Cauliflower Fettuccine with Bacon

Cauliflower is perfect for making sauces. This creamy dish of pasta has outstanding taste and consistency - it will prove how amazingly versatile this vegetable can be. You won't believe how irresistible it tastes unless you try it!

Ingredients for pasta dish:
Cauliflower - 3 cups
Olive oil - 2 tbsp.
Salt - to taste
Bacon - 5 slices (cut into lardons)
Yellow onion - 1/2 (finely diced)
Pasta - 1 lbs. (use gluten-free if you avoid gluten)
Chives - to garnish
Parsley - to garnish
Method of preparing the pasta dish:
  1. Combine the cauliflower with 1 cup water in a medium pot and bring to a simmer. Place the lid on the pot and set heat on low for 10 minutes to steam the cauliflower.
  2. Transfer all content of the pot to the jar of a blender, add olive oil and blend until smooth and creamy. Add some kosher salt, as preferred.
  3. Cook the bacon in a large sauté pan over medium-high heat, until the fat has rendered (about 7 minutes).
  4. Add the onions and cook them with the bacon for another 7 minutes.
  5. In a separate pot filled with salted water, cook the pasta to al dente.
  6. When done, drain the pasta and add it to the bacon and onions. Pour in the cauliflower alfredo sauce.
  7. Add in the chives and parsley and add some optional kosher salt. Serve hot and enjoy!
Chef's Tip:
What are bacon lardons? To make them, simply stack all 5 slices on top of each other and slice the bacon into 1/4-inch strips. Voila!
